Chicken & White Bean Chili
Ingredients: 1 Rotisserie Chicken (Costco preferred) Shredded 1 White Onion (Large) 1 Jalapeno Mined (seeds in for more heat) 2 Strips Pepper Bacon 3 Tbls Minced Garlic 2 Tbls Butter 2 Tbls Olive Oil Extra Virgin 2 Cans Chopped Green Chili’s 1 Can Cream of Chicken Soup 1 Can Salsa Verde 4 Cans White Beans (rinsed, drained) 4 tbls Cilantro chopped 1 tsp Red Pepper Flake 1Tbls Cumin 1 tsp Chili Powder 2 Tbls Flour 1 Box Chicken Stock Directions: 1. In a heavy pot add Olive Oil and Minced Bacon, render bacon and remove. 2. add butter, Jalapeno, Onion, Garlic, seasonings and cook till onions are translucent. 3. add Flour to coat, and add the Soup, Salsa Verde, Chicken stock, bring to a simmer. 4. Add the Cilantro, Beans and Chicken bring back to a slow simmer. Serving Suggestions: I will serve with a dollop of Sour Cream, Fresh Cilantro, Squeeze of Lime and Shredded Pepper Jack cheese.
